Exploring
How to write a picture book. Using these resources. Am back and forth between 2 stories that I have been puzzling over for years. Hoping these books will help me get at least one of them written this summer from beginning to end.
Grilling
Chicken breasts, cutting them up and adding them to greens and fresh fruit for a delicious summer salad. Found the original recipe on Skinny Ms. and pinned it here. As always, I just used the recipe as a jumping off place and kind of did my own thing. It would easy to use rotisserie chick for this but we like our chicken marinated and grilled. The marinade I use is kind of my own creation…some soy sauce (1/3 cup?), garlic powder (1 teaspoon?), sesame oil (1 tablespoon), a little brown sugar (1 tablespoon?) and maybe a little teriyaki sauce or Hoisin sauce (1-2 tablespoons). Never measured the ingredients before but that should be close. Add a couple of chicken breasts and the marinade to a zip-lock bag. Marinate for several hours or overnight. Grill, turning several times. Dice the chicken and add to this Grilled Chicken and Blueberry Salad recipe.

Planting
Pinwheel flowers in my summer wheelbarrow. But the wind has been tornadic! So, I had to bring my posies in and glue gun their little petals back on. Picked these up at Dollar Tree. Going to get one extra to have on hand in case the wind plays “he loves me, he loves me not” with my pinwheels again.
Playing
The Wife Between Us on my phone via Audible while I take my morning walk. And on my Nook before bed. Got a wild hair and started a summer virtual book club. Really stepping out of my comfort zone with this! Had so many sweet FB friends join me to read this book, which they picked for our first read. Now I need to get my slow-readin’ butt in gear! That salad looks so good. I need to start making more salads to go with our dinner {and even as main courses}.
Right now, The Hubs and I are just counting down until our move is complete. Next week is my last week of work and the following week, we’ll be shipping our belongings.

Please try the grilled chicken on salad greens. I was so pleasantly surprised that PC liked it and thought it was filling enough to count as dinner. Sometimes he gets up and makes a sandwich after dinner and that’s when I know it wasn’t enough!
