For this month’s Pinterventure challenge, there was no theme. I decided to take advantage of the post falling on a Tuesday to share a Tasty Tuesday recipe.

Pinterventures 07.2020
The pin I chose was this easy faux crab salad recipe shared by Sabrina from Dinner, Then Dessert. It has been so darn hot the last few weeks. Too hot to enjoy much time on our patio or in our pool. That’s hot!! So I’ve been pinning light, easy prep recipes.
Last week I fixed a skinny lasagna roll-up recipe that had to be baked in the oven. Decided to bake it early in the day so that when it was 110* outside that afternoon, it wouldn’t feel almost that hot in the kitchen. This faux seafood salad recipe calls for things I generally have on hand…except for the crab. Or krab.
So this morning, I ran to Walmart to pickup a pound of crab. Mixed up this recipe in just a few moments and put it in the frig to chill until dinner. Meet me in the kitchen and let’s get dinner started.
Let’s Get Cooking: Easy Faux Seafood Salad
When I decided to make this for dinner, I originally planned to add those tiny cocktail shrimp in with the crab. But my Walmart was out of almost all things seafood. I was lucky to find the crab I needed. Here are the ingredients you will need.

The Recipe
- 1 pound imitation crab meat - I used smaller flaked crab
- 1 shallot minced (you can use red onion if you need) - I used red onion
- 1/2 cup mayonnaise - I used 1/4 c light mayo and 1/4 c nonfat plain Greek yogurt
- 1/2 cup celery minced
- 1/2 teaspoon paprika
- 1/2 teaspoon dill
- 1/4 teaspoon Kosher salt - I used Himalayan pink salt
- 1/4 teaspoon black pepper
The original recipe calls for spreading the salad onto a crusty hoagie-type roll. I prefer soft bread and chose croissants instead.
The Directions
The directions for my Pinterventures 07.2020 recipe are so simple. I had dinner ready in less than 15 minutes.
- Chop red onion and celery, I used this vegetable chopper my BFF Sharon gave me years ago
- Place in a medium-sized bowl
- Add mayo or mayo/yogurt and mix
- Blend in spices, salt and pepper
- Add crab, break larger pieces into smaller pieces
- Combine all ingredients thoroughly until the crab is shredded into smaller flakes
- Chill for an hour or so
- Serve on roll, croissant or atop leaf lettuce
Dinner tonight was 3 types of salad. The easy faux seafood salad, a pistachio Cool Whip pineapple salad I’ve known as Watergate salad (does that date me?), and an Asian salad in a bag from Walmart.
Had thought we would eat on the patio but guess what?? It rained just as I had dinner ready. I was so excited that I grabbed my camera and ran outside to take pictures.
So, we ate happily at the kitchen table and watched the rain fall out the French doors.
This was a feel good supper. Maybe with the exception of the croissant. The salads were tasty and satisfying without leaving us feeling like stuffed Thanksgiving turkeys. The only thing that might have been missing was a crispy white wine. Hope you will give this recipe a try.

Looks delicious, Leslie, and my hubby would love this. He loves imitation crab, and makes salads out of it all the time - but me not so much!
Mix some up for the hubs with imitation crab and add shrimp or chicken to yours instead. It was easy and low cal and delish!

Yum! This looks so tasty! I love having these cold meals as options when it’s too hot to turn on the oven. My hubby is allergic to imitation crab, but I’m sure i could use canned crab in place! Can’t wait to give this a shot!

I love the idea of these salads served on a croissant, I would never think to do that but it sounds delicious. The summer really hasn’t taken off here in the UK, we’ve had a few nice weeks but nothing to write home about. Fingers crossed for some salad weather soon!

This looks delicious! I just made a cold chicken salad with very similar ingredients but I didn’t like it with the mayo so I put my serving in a colander and rinsed all the mayo off and then I loved it. I think I have a simpler palette than most. My husband thought I was nuts.
